History of Iekei Ramen
Born and popularized in Yokohama, Iekei ramen is a style of ramen that has become extremely popular since its inception in 1974.
A long-distance truck driver spent time making his original ramen soup by mixing Kyushu (Southern part of Japan) Tonkotsu base and unique soy sauce from Kanto area. After perfecting the soup, he then became confident enough to quit his job and opened a ramen shop with the new concept. Since then, Iekei ramen has become very popular and the number of Iekei stores has been increasing.
Iekei ramen is well-known for its flavor-rich soup that uses a mix of pork and chicken ingredients together with an aromatic mix of soy sauce called Tare (ta-re). The soup is then presented with specially made medium-thick noodles, unlike normal ramen, which uses very thin noodles.
The customer can then customize the ramen with a range of condiments and spices and eat ramen the way they like it.
